Ingredients
3 overripe bananas
1 egg
1/4 cup plain yogurt
1/2 cup brown sugar
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
Pinch of salt
1/2 tsp cinnamon (optional)
1/2 cup chocolate chips or chopped dark chocolate
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. Mash bananas in a large bowl until smooth.
3. Add egg, yogurt, sugar, and vanilla. Whisk well.
4. In a separate bowl, mix flour, baking soda, salt, and cinnamon.
5. Add dry mixture to wet and stir until combined.
6. Fold in chocolate chips.
7. Pour batter into the pan and bake 30–35 minutes, or until golden.
Notes
This recipe freezes beautifully. You can also use a muffin tin for individual portions. Add a touch of nutmeg or walnut pieces for variety.
